After putting out food you have to wait for cats to show up.
The amount and type of fish cats give when they leave is random, with gold fish being more rare obviously.

Well, saving is automatic but once you put out food, cats are going to show up until it runs out. So you can't "pause" that.
Cats show up and leave whenever they want. Some cats are rarer than others so you don't want to miss them.
The whole point of the game is to see every cat and collect their mementos.
Collecting a lot of cats probably does this.
